Why Every Thessalonian Has Their Own Favorite Bougatsa Shop

Hello, friends!

Today, as you can probably tell from the title, we are going to talk about bougatsa one of the most beloved foods in Thessaloniki, Greece and the local shops that make it.

I won’t spend too much time on its history, how it’s made, or when it was invented. Instead, I want to share something more personal: the place bougatsa has in our everyday lives and the special bond we have with our favorite shops.

Because here in Thessaloniki, bougatsa is much more than just breakfast. It is part of our daily routine, our happy memories, and our local culture.

If you ask a local where to find the best bougatsa in town, be ready for a strong opinion. Almost everyone has a favorite spot, and they will proudly tell you why theirs is the best!

A Tradition From Over a Century Ago

There is an interesting fact about bougatsa in Thessaloniki. The city’s Bougatsa Makers’ Guild was started in 1917, and by 1919, it already had 51 members.

Just think about that. Over a hundred years ago, making bougatsa was already a major profession in our city. This shows how deeply bougatsa was connected to everyday life. You can easily imagine old neighborhood streets filled with the smell of warm pastry, where people stopped every morning before work.

Today, that is still true. Bougatsa shops remain a huge part of life in Thessaloniki. To me, this proves that bougatsa is not just a traditional food. It is a living tradition passed down through generations.

What Is Bougatsa?

Bougatsa is made with super thin layers of pastry dough that get nice and crispy when baked.

Today, the most common types are filled with cheese or sweet vanilla custard.

But the original version the one my grandfathers taught me to love was very simple. It had no filling at all. It was just crispy pastry sprinkled with coarse sugar . That was the classic bougatsa of their time.

Food, after all, is not just about recipes. It is about memories and family traditions.

My grandfather Georgios knew a very different Thessaloniki. He opened his own restaurant in the city center back in 1932. So when I talk about our city’s food culture, I am not just sharing history from books. I am sharing a piece of my own family’s story.

My Father’s Favorite Spots

I remember my father had two favorite bougatsa shops in the city center the exact same neighborhood where both he and I grew up.

Some of these old shops have been passed down from parents to children and are still open today, keeping the same recipes alive. Other shops have closed over the years, but they live on in the memories of the people who loved them.

Of course, not every shop is a century old. Many places opened twenty or thirty years ago and have become a daily habit for their customers.

That is the magic of Thessaloniki. Whether a shop has a long family history or is newer, both can become local favorites.

Four Favorite Shops Across the City

I was born in 1970, and having grown up in Thessaloniki, I know the city very well. Whether I am on the east side, the west side, or in the city center, I know exactly where to go for my bougatsa. In fact, I have just four favorite shops in the whole city.

Sometimes, I wake up at seven on a Sunday morning and drive all the way from the east side of Thessaloniki to the west, just to buy my favorite plain bougatsa. At that hour, the city is quiet. There is almost no traffic, and the streets feel completely peaceful.

I bring the warm bougatsa home, put some coarse sugar on top, sit at the table, and enjoy it while thinking of my father and grandfather.

They are no longer here. But in moments like these, I feel like they are still with me. The taste, the smell, and this simple Sunday morning routine bring them right back to the table.

Maybe that is why every person from Thessaloniki has a favorite bougatsa shop. It is not just about which shop makes the crispiest pastry. It is about where our memories live, and about the people we keep in our hearts.

More Than Just a Place to Eat

I know I am not the only one who does this. Many people in Thessaloniki feel the same way about their favorite spot.

Sometimes, you walk into one of these shops early on a Sunday morning and run into someone you haven’t seen in years. You are both there for the same simple reason: to enjoy a good bougatsa.

You start talking, catching up on old times, and before you know it, you are sharing stories over breakfast.

That is what makes Thessaloniki’s bougatsa shops so special. They are not just places to eat. They are places where old friends meet, where familiar faces come together, and where everyday life brings people closer.
